  • 2 eggs
  • 1/3 cup honey or maple syrup
  • 1/4 cup olive oil
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 cup raw sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • sprinkle of salt
  • 2 cups wholemeal flour
  • 1/2 cup Aussie Frozen Fruit Blueberries


  • Pre-Heat oven to 180’C and line muffin tin or lightly grease silicon muffin tray.
  • In a large bowl, add eggs, maple syrup or honey, olive oil and vanilla. Mix well to combine using a whisk. Add in cinnamon, baking powder, baking soda, salt and wholemeal flour. Make sure all combined, be careful not to over mix.
  • Add Aussie Frozen Fruit Blueberries and stir in gently.
  • Scoop into prepared muffin trays, filling to 3/4 mark.
  • Bake for approximately 20 minutes and check once cooked with a skewer. Allow to cool for at least 30 minutes in tin and then transfer to a wire rack. Enjoy!
