Baked Berry Pudding

Baked Berry Pudding
A delicious mixed berry dessert that can be whipped up in no time!
Equipment
- Baking dish
Ingredients
- 125 g softened butter
- 1/2 cup sugar
- 1 cup self-raising flour
- 2 eggs
- 3/4 cup milk
- 1 cup Aussie Frozen Fruit Mixed Berries
- Double cream, to serve
Instructions
- Preheat oven to 180C (160C fan-forced)
- Combine butter, sugar, flour and eggs in a large bowl and mix with electric mixer on high speed for about two minutes.
- Stir in milk.
- Spray a shallow pie dish or baking tray with canola oil. Pour in the batter and top with fruit, the fruit will sink into the batter when cooking.
- Place into the oven and bake for 45 minutes, keep an eye on the batter, when the pie is ready it should spring back slightly when touched.
- Serve warm with cold double cream. Enjoy!
