Baked Berry Pudding

A delicious mixed berry dessert that can be whipped up in no time!

Ingredients
  

  • 125 g softened butter
  • 1/2 cup sugar
  • 1 cup self-raising flour
  • 2 eggs
  • 3/4 cup milk
  • 1 cup Aussie Frozen Fruit Mixed Berries
  • Double cream, to serve

Instructions
 

  • Preheat oven to 180C (160C fan-forced)
  • Combine butter, sugar, flour and eggs in a large bowl and mix with electric mixer on high speed for about two minutes.
  • Stir in milk.
  • Spray a shallow pie dish or baking tray with canola oil. Pour in the batter and top with fruit, the fruit will sink into the batter when cooking.
  • Place into the oven and bake for 45 minutes, keep an eye on the batter, when the pie is ready it should spring back slightly when touched.
  • Serve warm with cold double cream. Enjoy!
