Frozen Strawberry Cheesecake
Ideal for special summer desserts!
Equipment
- Spring form tin
Ingredients
- 500 g softened cream cheese
- 3/4 cup caster sugar
- 2 tbsp lemon juice
- 100 ml cream (boiling)
- 2 cups Aussie Frozen Fruit Strawberries chopped and blended
- 2 tbsp sugar
- 3 eggs separated
Instructions
- Heat cream to boiling point.
- Beat cream cheese and ¾ cup caster sugar until smooth. Add egg yolks and lemon juice until just mixed.
- Slowly add cream until mixed.
- Fold through the blended frozen strawberries.
- Beat egg whites until stiff.
- Gradually add extra sugar and mix until dissolved.
- Fold egg whites through cream mixture until barely combined.
- Pour into a 20cm springform tin.
- Freeze overnight.
- Remove from the freezer 30 minutes before serving and dust with icing sugar.
