Mixed Berry Pancakes

Ingredients
  

  • 3/4 cup milk
  • 2 tbsp white vinegar
  • 1 cup plain flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp white sugar
  • 2 tbsp melted butter (plus extra for pan)
  • 1 cup Aussie Frozen Fruit Mixed Berries

Instructions
 

  • Mix together the milk and vinegar and set aside.
  • In a bowl, add all dry ingredients and mix until combined.
  • Add to the bowl 1 egg, melted butter and milk mixture and whisk until combine. Stir through Mixed Berries and set aside.
  • Heat a non-stick fry pan over medium heat and add a touch of butter to coat the pan.
  • Using a measuring cup or ladle, add around 1/3 cup to the hot pan and cook until bubbles start to appear on the surface. Flip and cook for a further 1-2 minutes. Repeat until all the batter has been used.
  • Serve with a berry coulis, maple syrup or ice-cream. Enjoy!
