Strawberry Cake

Strawberry Cake


  • 400 g Aussie Frozen Fruit Strawberries
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup lemon juice
  • 1 cup Greek Yoghurt
  • 1 tsp vanilla essence
  • 2 1/4 cups cups plain flour
  • 4 tsp baking powder
  • 1/4 tsp salt
  • Fresh strawberries to decorate
  • Icing sugar to decorate


  • Pre-heat oven to 180' fan-forced or 200'
  • Grease a round cake tin or line with baking paper
  • Slightly defrost the frozen strawberries and cut in half (set aside)
  • Place all wet ingredients in a mixer and mix until combined
  • Add all dry ingredients and combine until free of lumps
  • Add half of the cake batter to the pan and place half of the cut strawberries over the batter
  • Top with the remaining batter and then decorate with remaining strawberries
  • Bake in the oven for approx. 50 minutes or until the skewer comes out clean
  • Leave to cool before transferring to a wire rack
  • Serve dusted with icing sugar and fresh strawberries and enjoy
