Strawberry Breakfast Bars

Base Layer

  • 1/4 cup coconut oil melted
  • 1/4 cup sugar
  • 1 egg
  • 3/4 cup plain flour
  • 1/4 tsp cinnamon
  • sprinkle of salt

Strawberry layer

  • 400g Aussie Frozen Fruit Strawberries Slightly soften and diced
  • 1 tbs sugar
  • 1 tbs lemon juice

Crumble layer

  • 1/2 cup plain flour
  • 1/4 cup coconut oil melted
  • 1/4 cup raw sugar
  • 1 1/4 cup rolled oats
  • 1/4 cup almonds or walnuts chopped


Base layer

  • Heat oven to 180' and prepare baking dish with grease proof paper.
  • Blend together coconut oil, sugar, and egg until combined.
  • Add in flour, cinnamon and salt, blending on low until just combined.
  • Press mixture into prepared baking dish.

Strawberry layer

  • Combine strawberries, sugar and lemon juice and set to one side.

Crumble layer

  • Combine all crumble ingredients and press together until its crumbly.

How to assemble

  • Evenly spread the strawberry mixture over the base layer (leave any excess liquid in the bowl).
  • Sprinkle the crumble mixture over the strawberry layer, ensuring all gaps are covered.
  • Bake in the oven for 35 - 40 minutes or until golden brown.
  • Once cool, slice into bars.
